Brinjal Curry



Brinjal Curry

Ingredients

1.

a. Sesame seeds - 50 gms

b. Groundnut – 50 gms

c. Coconut grated – 1 No

d. Coriander – 50 gms

e. Long Chilly – 50 gms

f. Turmeric powder – 3 gms

g. Curry Leaves – 1 Strand

2. 2. Brinjal – 1 Kg

3. 3. Onion – 300 gms

4. 4.Tomato – 250 gms

5. 5.Chillie Powder – 15 gm

6. 6.Coriander Powder – 15 gm

7. 7.Turmeric Powder – 5 gms

8. 8.Curry Leaves – 2 Strands

9. 9. Gingelly Oil – 100 gms

10. 10. Asafoetida – 5 gms

11. 11. Tamarind Paste – 300 ml

12. 12. Mustard – 1 tsp

13. 13. Salt to taste

Method

Fry the items mentioned in Item No 1 in Gingelly oil. Then grind these items into a smooth paste. Heat oil in another pan then add mustard, curry leaves and onion. Fry these items till the color of the onion turns into golden brown. Now add chillie powder, coriander powder, turmeric powder one by one. Fry them till the raw smell is gone. Add tomato and cook till the tomatoes are fully cooked. Then add the ground paste, asafoetida and tamarind paste and cook till the gravy boils. When it boils add the cut brinjals and cook till the brinjals are fully cooked. Decorate with tomatoes and curry leaves.
